Growing up my mom would always make us flat pancakes on Saturday mornings. They’re my absolute favorite for breakfast and whenever we’re home visiting, that’s simply what we all request. We call them flat pancakes but really, they’re just crepes with a little bit of something extra. Unlike normal pancakes topped with syrup, our family flat pancakes taste best when sprinkled with sugar and a spritz of lemon or slathered in blueberry or strawberry jelly. Mmm! I often crave a little taste of home and will whip this up on the weekend. It’s super easy and only requires the most basic ingredients.

- 1 cup all-purpose flour
- 2 egs
- 1/2 cup milk
- 1/2 cup water
- Splash of vanilla
- Butter for the pan
- In a large mixing bowl, whisk together flour, milk, eggs and water.
- Heat a lightly buttered pan over medium heat.
- Pour a generous scoop of batter onto the pan and tilt the pan in a circular motion so that all of the batter lightly coats the surface.
- Cook for about 2 minutes until the bottom is light brown and with a spatula flip the flat pancake over and cook the other side.
- Serve warm with sprinkled sugar and lemon or jelly. Tastes really good with a cup of coffee, too! Enjoy.
