If you’ve been following my blog, you know I’m a firm believer in breakfast. And most of the times, the hardest decision that I start my day with is whether I should to eat something sweet or savory for breakfast. And once it’s been narrowed down to sweet, is it fruity sweet or chocolatey sweet? Does this happen to anyone else or am I the only one that thinks this hard about their breakfast? On those days where it’s too difficult to decide, why not go with both, right? Here’s a flaxseed pancake recipe that goes great with sweet fruits or sweet chocolates. It’s delicious for weekend mornings or for those weekday nights when the easiest thing to cook up is breakfast for dinner.
- 1 1/2 cups of all purpose flour
- 3 1/2 teaspoons baking powder
- 1 egg
- 1 cup milk
- 1 teaspoon white sugar
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 2 tablespoons butter, melted
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- 2 tablespoons of flaxseed
- A handful of blueberries or chocolate chips
- In a large bowl, mix together the dry ingredients. In a small bowl, whisk together the egg, milk, vanilla and butter. Pour the wet ingredients into the large bowl and mix well, add in chocolate chips or blueberries.
- Heat a lightly buttered griddle or frying pan over medium heat. Pour about a 1/4 cup of batter onto the griddle and cook until bubbles form on the top. Flip over and remove once golden brown. Enjoy.
