I decided to try something I haven’t done before and that was pickling. I’ve always loved the taste of pickles, especially ones that are both sweet and savory. I also liked the idea of homemade pickles, so finally I gave it go. And seriously, I had no idea it would be that easy to make this delicious, crunchy snack. It’s so simple! What I also learned is that you can pickle other veggies too, like radishes and carrots and beets. Cool right? So join me in this pickling experience, it’s quite fun and makes you feel a little bit hipster.
- Jar with a lid (I used an empty jam jar)
- Kirby cucumber
- 1 cup of water
- 1 cup of white vinegar
- A sprinkle of red cayenne pepper powder
- A little bit of chopped garlic
- 2 teaspoons salt
- 1 tablespoon sugar
- In the empty jar, add half a teaspoon of chopped garlic and sprinkle in a little red cayenne pepper.
- Chop the cucumber into slices.
- In a separate bowl, mix together the water and vinegar, add in the sugar and salt and stir until it’s completely dissolved.
- Place the chopped cucumbers into the empty jar and using a funnel pour the water/vinegar mixture in.
- Seal the jar and let it sit in the refrigerator overnight. Enjoy.
