Whether you’re staying in with your love or having a galentines day, this is the perfect dessert for two. What’s really great about this recipe is that it looks all fancy and pretty but really, it’s so simple! I think it’s the ramekins. They have that glamorous effect on desserts, don’t they? This chocolate souffle is light, airy but also satiates that chocolate craving you get after a good meal with the one you love. Here’s how you make it:
- 3 tablespoons butter
- 2 tablespoons unsweetened cocoa
- 1/2 teaspoon vanilla extract
- 2 eggs
- 2 tablespoons sugar
- 1/2 lemon
- 1/3 cup semisweet chocolate chips
- salt
- Preheat the oven to 375 degrees F. Butter the inside of the ramekins and then coat the ramekins with the cocoa.
- Boil a pot of water, place a large bowl over the pot of water. Pour the chocolate chips in the bowl to melt them and stir in the remaining butter.
- Remove from heat and add in the vanilla and 2 egg yolks. Stir until smooth.
- In a separate bowl, beat 2 egg whites, sugar, pinch of salt and lemon juice together. Pour the egg white mixture into the chocolate mixture and stir.
- Spoon mixture into ramekins. Bake for 25 minutes and serve immediately.
- Sprinkle some powdered sugar on top to make it look pretty. Enjoy.
