In my effort to eat blueberries before they are completely out of season and no longer sold in the grocery stores, I came to the conclusion that I had to make these sweet little puffy pastry pies. And man, I’m glad I did. They were the perfect 3 p.m. snack with a cup of milky coffee and a book along side. I was surprised at how easy they were to make and how tasty they were when served either warm or cold.
- 1 sheet of puff pastry
- 1 pack blueberries
- 3 tbsp sugar
- 1 tsp cornstarch
- 2 tsp fresh lemon juice
- 1 tsp vanilla
- 1 egg
- A splash of milk
- Preheat the over to 400 degrees F.
- In a small bowl, mix the blueberries, lemon juice, cornstarch, vanilla, and sugar together.
- Carefully unfold and roll out the puff pastry on a clean and floured surface.
- Place the blueberry mixture in the middle of the puff pastry and gently fold over the edges, using a knife or fork to help create the folds.
- Make an egg wash by beating the egg in a bowl and adding a splash of milk. Brush the egg wash over the pastry crust.
- Bake until golden brown for about 20-25 minutes. Enjoy.
