S’more Cookies Please

One of the things we didn’t get to do this summer was go camping. I was a little bummed because we usually like to go on a summer camping trip, and my favorite part is always the s’mores. Since we were deprived of roasting s’mores over a campfire, Dave and I decided we’d make s’mores at home. It was like 9:50 p.m. and we dashed our way to CVS before it closed. We grabbed a box of graham crackers, Hershey chocolate bars, and a pack of marshmallows and roasted them on a fork over our little coil stove. Desperate, huh? They definitely didn’t taste as good as they do when they’re made over hot campfire. They didn’t have that burnt, smokey taste but they were good enough to satiate our craving. A couple weeks later, I realized I had all these marshmallows left over so thought I’d make them into s’more cookies. I’ve seen s’more cookies on Pinterest before and they look like, this, this, or this. So I thought, how hard can this be? Truth be told, mine did not look like that at all! What the heck!? When I took them out of the oven they were completely distorted and the marshmallows had melted all over the cookie sheet. Pinterest FAIL. I was disappointed in how they turned out, but once I tasted them… man, were they good. So that’s why I’m sharing them here today. They weren’t perfectly shaped with the marshmallow all puffy in the right areas, but they were darn good.

  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup butter
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1 1/3 cups flour
  • 1 teaspoon baking powder
  • 3/4 cup graham cracker crumbs
  • 1 cup chocolate chips or Hershey’s bar broken up
  • 1 cup pieces of marshmallows
  • Salt
  1. In a large bowl mix together the butter, brown sugar, egg and vanilla until smooth.
  2. In a separate bowl mix together the sugar, salt, flour and baking powder. Crush up the graham crackers and toss those into the mix.
  3. Add the dry ingredients to the wet ingredients and stir. Add in the marshmallows and chocolate.
  4. Place a spoonful of batter onto a cookie sheet. Bake at 350 degrees for 12 minutes. Remove from oven once golden brown. Sprinkle salt on top for extra flavor. Enjoy.

    These look glorious! My son would be alllll over these! They’re easy enough we were going to make brownies but I prefer these LOL I’ll probably end up making these Wednesday since that will be our “baking” day. Thanks for sharing and have a great one Melissa! -Iva
