Spanish Tortilla

Spanish TortillaA quick confession: most of my days are spent dreaming about my study abroad in Spain. Spain is one of my favorite countries. I mean, they take siestas – go home and nap in the middle of the work day, and then stay out and fiesta until 6 a.m. to get churros con chocolate. Who doesn’t love that? I have moments when I want nothing more but to be transported back there, sitting in a plaza and hearing that beautiful language. Ugh, it kills me! In hopes to relive my time there I decided to make a tortilla española. A traditional Spanish omelette that contains only eggs, potatoes and onions. It’s so simple and so delicious. What I also love about this dish is that you can eat it both hot or cold, it doesn’t matter, it just always tastes good.

  • 2 large gold potatoes
  • 1 sweet yellow onion
  • 1/2 cup extra virgin olive oil
  • 4 eggs
  • A splash of salt
  1. Peel the skin off of the potatoes. Once all the skin is off keep using the peeler to peel down the potato into really thin slices. Chop up the onion into small pieces.
  2. In a small to medium sized non-stick pan, heat up the olive oil. Once heated, add in the onions and potatoes. Make sure all the onions and potatoes are covered in oil and cook them until they are soft and clear.
  3. Scramble the eggs together in a large bowl. Add the potatoes and onions into the egg bowl. Throw a splash of salt into the mixture.
  4. Wipe off the pan and reheat a little bit of olive oil. Add in the potato, onion, egg mixture and make sure you lower the heat to medium/low.
  5. Cook until the bottom portion is light brown and solid in texture. Once the bottom is cooked, cover the pan with a plate and flip the pan over so that the omelette flips on to the plate.
  6. Quickly put the uncooked side back into the pan. Cook until it is light brown and solid in texture.
  7. Once thoroughly cooked, put the omelette on a plate and cut up to serve. Enjoy.

    That looks delicious! I just finished up taking a Spanish Civilization class, the last day we all made tapas and brought them to class! This would’ve made a great tapa :)
